Fresh Georgia Soft Shell Crabs with Thai Lime Green Curry Sauce
Six fresh georgia soft shell crabs
1 cup white whole wheat seasoned with salt and pepper
canola oil for frying
salt and pepper to taste
2 eggs
Clean the soft shell crabs or have the fish munger do it for you
Dry the crabs well with a clean cloth and then season with salt and pepper
Dip the seasoned crabs in an egg wash prepared by mixing 2 eggs with 1/3 of a cup of water and mixing well
Roll the dipped crabs in the flour, seasoned with salt and pepper
Place a skillet on a medium heat and heat the oil to 350 degrees
Fry the crabs until they are golden brown and drain them on a metal rack or clean dry paper towels
Thai Lime Green Curry Sauce
Two tablespoons of fresh grated ginger
One cup coarsely chopped fresh thai basil
1/4 teaspoon cumin
One tablespoon finely chopped garlic
1/2 cup of finely chopped green onions
One tablespoon Golden Mountain Sauce
One tablespoon key lime juice
One teaspoon chile sauce
One fresh large kaffir lime leaf
1/2 teaspoon honey
Two tablespoons of finely chopped lemon grass
Five tablespoons of fresh finely chopped cilantro
1/2 a cup of water
Place all the ingredients into a large food processor except for two of the Kaffir lime leaves and process to a fine paste
Place the mixture on a medium heat and bring to a slow boil
Once the mixture has reached a boil turn the heat off and pour the mixture thru a fine strainer Pour the heated sauce over the warm fried crab and enjoy.

Three large sweet peppers roasted and the skins removed
Three tablespoons of fresh finely chopped cilantro.
1/2 teaspoon of key lime juice
Three drops of Habanero sauce
1/3 teaspoon of balsamic vinegar
Salt and pepper to taste
Place all the ingredients in a food processor
Process until the mixture is coarsely chopped
Season with salt and pepper to taste.
